Mexican Tortilla Casserole

Ingredients:

  • 1 lb ground beef (or chicken)
  • 1 tbsp olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 1 cup diced tomatoes (or Rotel)
  • 1/2 cup sugar-free salsa
  • 1 tsp cumin
  • 1 tsp chili powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 1/2 cups shredded cheese (cheddar & mozzarella blend)
  • 4-5 low-carb tortillas (or homemade almond flour tortillas)
  • 1/2 cup sour cream (for topping)
  • 2 tbsp chopped cilantro (optional)

Instructions:

  1. Cook the Meat: In a skillet, heat olive oil and sauté onions until soft. Add garlic and cook for 30 seconds. Add ground beef and cook until browned. Drain excess fat.
  2. Season & Simmer: Stir in tomatoes, salsa, cumin, chili powder, paprika, salt, and pepper. Simmer for 5 minutes.
  3. Layer the Casserole: In a greased baking dish, layer tortillas, meat mixture, and cheese. Repeat layers until all ingredients are used, ending with cheese on top.
  4. Bake: Preheat oven to 375°F (190°C) and bake for 15-20 minutes or until cheese is bubbly and golden.
  5. Serve: Let it cool slightly, then top with sour cream and fresh cilantro.
