Cheesy Hamburger Potato Casserole

Ingredients:

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 2 cups cauliflower florets (or daikon radish/turnips), sliced
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella cheese
  • ½ cup heavy cream
  • ¼ cup cream cheese
  • 1 tsp mustard
  • ½ tsp paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp butter

Instructions:

  1. Preheat oven to 375°F (190°C). Grease a baking dish.
  2. Cook the beef – In a skillet, heat butter and sauté onion until soft. Add garlic, then ground beef. Cook until browned. Drain excess fat.
  3. Prepare the sauce – Reduce heat, add cream cheese, heavy cream, mustard, paprika, salt, and pepper. Stir until smooth.
  4. Assemble – Layer sliced cauliflower (or alternative) in the baking dish. Pour the beef mixture over it. Top with cheddar and mozzarella.
  5. Bake – Place in the oven for 20-25 minutes until bubbly and golden
