Cheesy Hamburger Potato Casserole


Ingredients:
- 1 lb ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 2 cups cauliflower florets (or daikon radish/turnips), sliced
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella cheese
- ½ cup heavy cream
- ¼ cup cream cheese
- 1 tsp mustard
- ½ tsp paprika
- ½ tsp salt
- ½ tsp black pepper
- 1 tbsp butter
Instructions:
- Preheat oven to 375°F (190°C). Grease a baking dish.
- Cook the beef – In a skillet, heat butter and sauté onion until soft. Add garlic, then ground beef. Cook until browned. Drain excess fat.
- Prepare the sauce – Reduce heat, add cream cheese, heavy cream, mustard, paprika, salt, and pepper. Stir until smooth.
- Assemble – Layer sliced cauliflower (or alternative) in the baking dish. Pour the beef mixture over it. Top with cheddar and mozzarella.
- Bake – Place in the oven for 20-25 minutes until bubbly and golden
