Keto Blueberry Muffins

Ingredients (Makes 6 muffins)

  • 1 cup almond flour
  • 2 tbsp coconut flour
  • ½ cup granulated erythritol (or preferred keto sweetener)
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 large eggs
  • ¼ cup melted butter (or coconut oil)
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • ½ cup fresh or frozen blueberries

Instructions

  1. Preheat oven to 350°F (175°C) and line a muffin tin with liners.
  2. Mix dry ingredients – In a bowl, whisk together almond flour, coconut flour, sweetener, baking powder, and salt.
  3. Combine wet ingredients – In another bowl, whisk eggs, melted butter, almond milk, and vanilla extract.
  4. Mix the batter – Slowly add the dry ingredients to the wet ingredients, stirring until well combined.
  5. Fold in blueberries gently to avoid crushing them.
  6. Fill muffin cups about ¾ full with the batter.
  7. Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
  8. Cool for 5-10 minutes before enjoying!
