Keto Blueberry Muffins

Ingredients (Makes 6 muffins)
- 1 cup almond flour
- 2 tbsp coconut flour
- ½ cup granulated erythritol (or preferred keto sweetener)
- 1 tsp baking powder
- ¼ tsp salt
- 2 large eggs
- ¼ cup melted butter (or coconut oil)
- ¼ cup unsweetened almond milk
- 1 tsp vanilla extract
- ½ cup fresh or frozen blueberries
Instructions
- Preheat oven to 350°F (175°C) and line a muffin tin with liners.
- Mix dry ingredients – In a bowl, whisk together almond flour, coconut flour, sweetener, baking powder, and salt.
- Combine wet ingredients – In another bowl, whisk eggs, melted butter, almond milk, and vanilla extract.
- Mix the batter – Slowly add the dry ingredients to the wet ingredients, stirring until well combined.
- Fold in blueberries gently to avoid crushing them.
- Fill muffin cups about ¾ full with the batter.
- Bake for 18-22 minutes or until a toothpick inserted in the center comes out clean.
- Cool for 5-10 minutes before enjoying!
