Keto Taco Casserole | Dorito Casserole

Ingredients:

For the “Dorito” Chips:

  • 1 cup almond flour
  • 1 cup shredded cheddar cheese
  • 1 tsp paprika
  • ½ tsp garlic powder
  • ½ tsp chili powder
  • ¼ tsp salt
  • 1 egg

For the Casserole:

  • 1 lb ground beef (or ground turkey)
  • 1 tsp taco seasoning
  • ½ cup diced tomatoes (or Rotel)
  • ½ cup sour cream
  • 1 cup shredded cheddar cheese
  • ½ cup shredded mozzarella
  • ¼ cup chopped green onions (optional)
  • ¼ cup sliced black olives (optional)

Instructions:

1. Make the Keto “Dorito” Chips

  1. Preheat oven to 350°F (175°C).
  2. Mix all the “Dorito” chip ingredients into a dough. Roll it out thin between parchment paper.
  3. Cut into triangle shapes and bake for 8-10 minutes or until crispy.

2. Prepare the Casserole

  1. In a skillet, cook ground beef over medium heat until browned. Drain excess grease.
  2. Add taco seasoning and diced tomatoes, stirring well.
  3. In a baking dish, layer the cooked beef, followed by sour cream, and half the shredded cheese.
  4. Crush some keto chips over the top for crunch. Add the remaining cheese.

3. Bake & Serve

  1. Bake at 350°F (175°C) for 15 minutes or until the cheese is melted.
  2. Garnish with green onions and olives. Serve hot!
