Keto Taco Casserole | Dorito Casserole

Ingredients:
For the “Dorito” Chips:
- 1 cup almond flour
- 1 cup shredded cheddar cheese
- 1 tsp paprika
- ½ tsp garlic powder
- ½ tsp chili powder
- ¼ tsp salt
- 1 egg
For the Casserole:
- 1 lb ground beef (or ground turkey)
- 1 tsp taco seasoning
- ½ cup diced tomatoes (or Rotel)
- ½ cup sour cream
- 1 cup shredded cheddar cheese
- ½ cup shredded mozzarella
- ¼ cup chopped green onions (optional)
- ¼ cup sliced black olives (optional)
Instructions:
1. Make the Keto “Dorito” Chips
- Preheat oven to 350°F (175°C).
- Mix all the “Dorito” chip ingredients into a dough. Roll it out thin between parchment paper.
- Cut into triangle shapes and bake for 8-10 minutes or until crispy.
2. Prepare the Casserole
- In a skillet, cook ground beef over medium heat until browned. Drain excess grease.
- Add taco seasoning and diced tomatoes, stirring well.
- In a baking dish, layer the cooked beef, followed by sour cream, and half the shredded cheese.
- Crush some keto chips over the top for crunch. Add the remaining cheese.
3. Bake & Serve
- Bake at 350°F (175°C) for 15 minutes or until the cheese is melted.
- Garnish with green onions and olives. Serve hot!
