1. Cream Cheese & Egg Crepes

Ingredients — 4 small crepes

  • 2 large eggs
  • 2 oz (55 g) full-fat or reduced-fat cream cheese, softened
  • ½ tsp vanilla extract
  • Pinch of cinnamon
  • Optional: a little zero-sugar sweetener

Method

  1. Blend everything until completely smooth.
  2. Let the batter rest for 2–3 minutes.
  3. Heat a nonstick pan over medium-low heat and lightly grease it.
  4. Pour in a thin layer of batter and cook about 1–2 minutes.
  5. Flip carefully and cook another 30–60 seconds.

Serve with: plain Greek yogurt + a few berries, or a small amount of peanut/almond butter.

2. Almond-Butter Protein Crepes

  • 2 eggs
  • 1 tbsp natural almond butter
  • 1 tbsp unsweetened Greek yogurt
  • ½ tsp cinnamon
  • ½ tsp vanilla
  • 1–2 tbsp unsweetened almond milk, as needed

Blend, then cook thinly in a nonstick pan.

3. Cottage Cheese Crepes

  • 2 eggs
  • ½ cup cottage cheese
  • ½ tsp vanilla
  • Cinnamon
  • Optional zero-sugar sweetener

Blend until smooth and cook over medium-low heat. These are particularly good with Greek yogurt and a few raspberries or strawberries.

Diabetes-friendly topping ideas

  • Plain Greek yogurt + cinnamon
  • Berries + chopped walnuts
  • Unsweetened peanut/almond butter
  • Cottage cheese + berries
  • Sugar-free chocolate/cocoa mixed with Greek yogurt

Tip: Even flourless crepes can raise blood glucose depending on the ingredients and portion size. Keep sweeteners and fruit portions modest, and choose unsweetened dairy/nut butters where possible. If you monitor glucose, checking your response after a new recipe can be useful.
