
🍞 Diabetes-Friendly Cinnamon Bread
Ingredients
- 1 cup whole-wheat flour
- ½ cup almond flour
- 1½ tsp baking powder
- 1 tsp ground cinnamon
- ¼ tsp salt
- 2 eggs
- ½ cup plain Greek yogurt, unsweetened
- ¼ cup unsweetened applesauce
- 2 tbsp olive oil or melted butter
- 1–2 tbsp monk-fruit/erythritol sweetener, to taste
- 1 tsp vanilla extract
- 2 tbsp chopped walnuts or pecans (optional)
Cinnamon swirl
- 1½ tsp cinnamon
- 1 tbsp monk-fruit/erythritol sweetener
- 1 tsp melted butter
Method
- Heat oven to 175°C (350°F). Line a small loaf pan with parchment.
- Mix the whole-wheat flour, almond flour, baking powder, cinnamon, and salt.
- In another bowl, whisk eggs, Greek yogurt, applesauce, oil/butter, sweetener, and vanilla.
- Combine wet and dry ingredients. Don’t overmix.
- Mix the cinnamon-swirl ingredients.
- Pour half the batter into the pan. Sprinkle with the cinnamon mixture, then add the remaining batter. Swirl gently with a knife.
- Sprinkle nuts on top if desired.
- Bake for 35–45 minutes, until a toothpick comes out mostly clean.
- Cool for at least 15 minutes before slicing.
For better blood-sugar control: keep the slice moderate (about 1/10 of the loaf), and pair it with an egg, Greek yogurt, or another protein rather than eating it by itself. Avoid adding regular sugar, honey, dates, or a sugary glaze.
