🍞 Diabetes-Friendly Cinnamon Bread

Ingredients

  • 1 cup whole-wheat flour
  • ½ cup almond flour
  • 1½ tsp baking powder
  • 1 tsp ground cinnamon
  • ¼ tsp salt
  • 2 eggs
  • ½ cup plain Greek yogurt, unsweetened
  • ¼ cup unsweetened applesauce
  • 2 tbsp olive oil or melted butter
  • 1–2 tbsp monk-fruit/erythritol sweetener, to taste
  • 1 tsp vanilla extract
  • 2 tbsp chopped walnuts or pecans (optional)

Cinnamon swirl

  • 1½ tsp cinnamon
  • 1 tbsp monk-fruit/erythritol sweetener
  • 1 tsp melted butter

Method

  1. Heat oven to 175°C (350°F). Line a small loaf pan with parchment.
  2. Mix the whole-wheat flour, almond flour, baking powder, cinnamon, and salt.
  3. In another bowl, whisk eggs, Greek yogurt, applesauce, oil/butter, sweetener, and vanilla.
  4. Combine wet and dry ingredients. Don’t overmix.
  5. Mix the cinnamon-swirl ingredients.
  6. Pour half the batter into the pan. Sprinkle with the cinnamon mixture, then add the remaining batter. Swirl gently with a knife.
  7. Sprinkle nuts on top if desired.
  8. Bake for 35–45 minutes, until a toothpick comes out mostly clean.
  9. Cool for at least 15 minutes before slicing.

For better blood-sugar control: keep the slice moderate (about 1/10 of the loaf), and pair it with an egg, Greek yogurt, or another protein rather than eating it by itself. Avoid adding regular sugar, honey, dates, or a sugary glaze.
