Ingredients — 4 small crepes
- 2 large eggs
- 2 oz (55 g) full-fat or reduced-fat cream cheese, softened
- ½ tsp vanilla extract
- Pinch of cinnamon
- Optional: a little zero-sugar sweetener
Method
- Blend everything until completely smooth.
- Let the batter rest for 2–3 minutes.
- Heat a nonstick pan over medium-low heat and lightly grease it.
- Pour in a thin layer of batter and cook about 1–2 minutes.
- Flip carefully and cook another 30–60 seconds.
Serve with: plain Greek yogurt + a few berries, or a small amount of peanut/almond butter.
2. Almond-Butter Protein Crepes
- 2 eggs
- 1 tbsp natural almond butter
- 1 tbsp unsweetened Greek yogurt
- ½ tsp cinnamon
- ½ tsp vanilla
- 1–2 tbsp unsweetened almond milk, as needed
Blend, then cook thinly in a nonstick pan.
3. Cottage Cheese Crepes
- 2 eggs
- ½ cup cottage cheese
- ½ tsp vanilla
- Cinnamon
- Optional zero-sugar sweetener
Blend until smooth and cook over medium-low heat. These are particularly good with Greek yogurt and a few raspberries or strawberries.

- Plain Greek yogurt + cinnamon
- Berries + chopped walnuts
- Unsweetened peanut/almond butter
- Cottage cheese + berries
- Sugar-free chocolate/cocoa mixed with Greek yogurt
Tip: Even flourless crepes can raise blood glucose depending on the ingredients and portion size. Keep sweeteners and fruit portions modest, and choose unsweetened dairy/nut butters where possible. If you monitor glucose, checking your response after a new recipe can be useful.
