WW MARRY ME CHICKEN

Ingredients:
- 4 boneless, skinless chicken breasts
- Salt and pepper, to taste
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1/2 cup chicken broth
- 1/2 cup fat-free half-and-half (or light cream)
- 1/4 cup grated Parmesan cheese
- 1 tablespoon Dijon mustard
- 1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)
- Fresh parsley, chopped (for garnish)
Instructions:
- Season chicken breasts with salt and pepper on both sides.
- Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook until golden brown on each side, about 5-6 minutes per side. Remove chicken from skillet and set aside.
- In the same skillet, add minced garlic and cook for about 30 seconds until fragrant.
- Add cherry tomatoes and cook for 2-3 minutes until they start to soften.
- Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
- Stir in half-and-half, Parmesan cheese, Dijon mustard, and thyme. Bring to a simmer.
- Return chicken breasts to the skillet, spooning some of the sauce over the top.
- Reduce heat to medium-low, cover, and cook for about 10-12 minutes, or until chicken is cooked through (internal temperature of 165°F/75°C).
- Garnish with chopped parsley before serving.
Notes:
- Serve the WW Marry Me Chicken over cooked whole wheat pasta, zucchini noodles, or with a side of steamed vegetables for a complete meal.
