Crock Pot Chicken and Dumplings

Ingredients:
- 1 lb boneless, skinless chicken breasts, cut into small pieces
- 2 cups chicken broth
- 2 cups water
- 2 carrots, sliced
- 2 celery stalks, sliced
- 1 onion, diced
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried parsley
- Salt and pepper to taste
- 1 cup frozen peas (optional)
- 1 can (10.5 oz) cream of chicken soup
- 1 can (16.3 oz) refrigerated biscuits (8 biscuits)
Instructions:
- In the crock pot, combine chicken pieces, chicken broth, water, carrots, celery, onion, garlic, thyme, parsley, salt, and pepper.
- Cover and cook on low heat for 6-7 hours or high heat for 3-4 hours, until chicken is cooked through and vegetables are tender.
- About 30 minutes before serving, shred the chicken using two forks.
- Stir in the cream of chicken soup and frozen peas (if using). Mix well.
- Cut each biscuit into quarters and place on top of the chicken mixture in the crock pot.
- Cover and cook on high heat for 30-45 minutes, until biscuits are cooked through (they will puff up and become dumplings).
- Gently stir the dumplings into the chicken mixture. Serve hot and enjoy your comforting crock pot chicken and dumplings!
