Ingredients:
- 1 tablespoon olive oil
- 1 onion, diced
- 3 cloves garlic, minced
- 4 cups vegetable broth
- 1 small head cabbage, chopped
- 2 carrots, diced
- 2 celery stalks, diced
- 1 can (14 oz) diced tomatoes
- 1 teaspoon dried thyme
- 1 teaspoon paprika
- Salt and pepper, to taste
- Fresh parsley, chopped (for garnish)
Instructions:
- Heat olive oil in a large pot over medium heat. Add diced onion and garlic, sauté until softened and fragrant, about 5 minutes.
- Pour in vegetable broth and bring to a boil.
- Add chopped cabbage, diced carrots, and celery to the pot. Stir well.
- Add diced tomatoes (with their juices), dried thyme, paprika, salt, and pepper. Stir to combine.
- Reduce heat to low, cover, and let simmer for 20-25 minutes, or until vegetables are tender.
- Taste and adjust seasoning if needed.
- Serve hot, garnished with fresh chopped parsley.
