EASY CABBAGE SOUP ADVERTISEMENT

Ingredients:

  • 1 tablespoon olive oil
  • 1 onion, diced
  • 3 cloves garlic, minced
  • 4 cups vegetable broth
  • 1 small head cabbage, chopped
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 1 can (14 oz) diced tomatoes
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions:

  1. Heat olive oil in a large pot over medium heat. Add diced onion and garlic, sauté until softened and fragrant, about 5 minutes.
  2. Pour in vegetable broth and bring to a boil.
  3. Add chopped cabbage, diced carrots, and celery to the pot. Stir well.
  4. Add diced tomatoes (with their juices), dried thyme, paprika, salt, and pepper. Stir to combine.
  5. Reduce heat to low, cover, and let simmer for 20-25 minutes, or until vegetables are tender.
  6. Taste and adjust seasoning if needed.
  7. Serve hot, garnished with fresh chopped parsley.
