Season chicken breasts with salt and pepper on both sides.
Heat olive oil in a large skillet over medium-high heat. Add chicken breasts and cook until golden brown on each side, about 5-6 minutes per side. Remove chicken from skillet and set aside.
In the same skillet, add minced garlic and cook for about 30 seconds until fragrant.
Add cherry tomatoes and cook for 2-3 minutes until they start to soften.
Pour in chicken broth, scraping up any browned bits from the bottom of the skillet.
Stir in half-and-half, Parmesan cheese, Dijon mustard, and thyme. Bring to a simmer.
Return chicken breasts to the skillet, spooning some of the sauce over the top.
Reduce heat to medium-low, cover, and cook for about 10-12 minutes, or until chicken is cooked through (internal temperature of 165°F/75°C).
Garnish with chopped parsley before serving.
