Weight Watchers Pasta Salad


For the Salad:

  • 8 oz whole wheat or chickpea pasta (cooked according to package instructions)
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 bell pepper (any color), diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup black olives, sliced
  • 1/4 cup feta cheese, crumbled (optional)

For the Dressing:

  • 2 tablespoons olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and black pepper to taste
  • 1 teaspoon dried oregano (optional)


  1. Cook Pasta:
    • Cook the pasta according to the package instructions. Drain and let it cool.
  2. Prepare Vegetables:
    • In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, red onion, black olives, and feta cheese (if using).
  3. Make the Dressing:
    • In a small bowl, whisk together olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, black pepper, and dried oregano (if using).
  4. Toss Salad with Dressing:
    • Pour the dressing over the pasta and vegetables. Toss everything together until well coated.
  5. Chill:
    • Cover the bowl and refrigerate the pasta salad for at least 30 minutes to let the flavors meld.
  6. Serve:
    • Before serving, toss the salad once more and adjust the seasoning if necessary.
  7. Optional Garnish:
    • Garnish with additional feta cheese or fresh herbs if desired.
