Vegan Tuscan White Beans 🥘🌱🇮🇹

Ingredients (Serves 4)
- 2 (15 oz) cans white beans (cannellini, great northern, or navy beans), drained & rinsed
- 1 tbsp olive oil (or water for oil-free)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved (or 1 diced tomato)
- 1 ½ cups vegetable broth
- 1 tbsp tomato paste
- 1 tsp dried oregano
- 1 tsp dried thyme
- ½ tsp red pepper flakes (optional, for heat)
- Salt & black pepper, to taste
- 2 cups fresh spinach or kale, chopped
- 1 tbsp lemon juice
- 1 tbsp nutritional yeast (optional, for a cheesy flavor)
Optional Garnishes:
- Fresh basil or parsley 🌿
- Extra drizzle of olive oil
- Crusty bread for dipping 🥖
Instructions
1️⃣ Sauté the Aromatics
- Heat olive oil in a pan over medium heat.
- Add onion and cook for 3-4 minutes until soft.
- Stir in garlic, tomato paste, oregano, thyme, and red pepper flakes. Cook for 1 minute.
2️⃣ Cook the Beans
- Add cherry tomatoes and cook until softened (2-3 minutes).
- Stir in white beans and vegetable broth.
- Let it simmer for 10 minutes, stirring occasionally.
3️⃣ Add Greens & Final Touches
- Stir in spinach/kale and cook for 2 minutes, until wilted.
- Remove from heat and add lemon juice & nutritional yeast.
4️⃣ Serve & Enjoy!
- Garnish with fresh herbs and serve with bread, rice, or pasta.
