Vegan Tuscan White Beans 🥘🌱🇮🇹

Ingredients (Serves 4)

  • 2 (15 oz) cans white beans (cannellini, great northern, or navy beans), drained & rinsed
  • 1 tbsp olive oil (or water for oil-free)
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 cup cherry tomatoes, halved (or 1 diced tomato)
  • 1 ½ cups vegetable broth
  • 1 tbsp tomato paste
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp red pepper flakes (optional, for heat)
  • Salt & black pepper, to taste
  • 2 cups fresh spinach or kale, chopped
  • 1 tbsp lemon juice
  • 1 tbsp nutritional yeast (optional, for a cheesy flavor)

Optional Garnishes:

  • Fresh basil or parsley 🌿
  • Extra drizzle of olive oil
  • Crusty bread for dipping 🥖

Instructions

1️⃣ Sauté the Aromatics

  • Heat olive oil in a pan over medium heat.
  • Add onion and cook for 3-4 minutes until soft.
  • Stir in garlic, tomato paste, oregano, thyme, and red pepper flakes. Cook for 1 minute.

2️⃣ Cook the Beans

  • Add cherry tomatoes and cook until softened (2-3 minutes).
  • Stir in white beans and vegetable broth.
  • Let it simmer for 10 minutes, stirring occasionally.

3️⃣ Add Greens & Final Touches

  • Stir in spinach/kale and cook for 2 minutes, until wilted.
  • Remove from heat and add lemon juice & nutritional yeast.

4️⃣ Serve & Enjoy!

  • Garnish with fresh herbs and serve with bread, rice, or pasta.
