Keto Cream Puffs

Ingredients:
For the Cream Puff Shells:
- 1 cup water
- 1/2 cup unsalted butter
- 1 cup almond flour (blanched)
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
- 3 large eggs
For the Keto Whipped Cream Filling:
- 1 cup heavy cream
- 2 tablespoons powdered erythritol (or sweetener of your choice)
- 1 teaspoon vanilla extract
Instructions:
Step 1: Make the Cream Puff Shells
- Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a saucepan, combine the water and butter over medium heat. Stir occasionally until the butter is melted.
- Once the butter is melted and the water is simmering, add the almond flour, salt, and baking powder. Stir vigorously for about 1-2 minutes until the dough comes together and thickens.
- Remove the pan from the heat and let the dough cool for a few minutes.
- Add the eggs one at a time, mixing well after each addition. The dough should become smooth and glossy.
- Transfer the dough to a piping bag (or a ziplock bag with the tip cut off). Pipe the dough into small mounds (about 1-2 inches in diameter) on the prepared baking sheet, spacing them apart.
- Bake for 25-30 minutes, or until the cream puffs are golden brown and puffed up. Do not open the oven door during the first 20 minutes of baking to prevent them from collapsing.
- Once baked, let the cream puffs cool completely on a wire rack.
Step 2: Make the Whipped Cream Filling
- In a chilled mixing bowl, whip the heavy cream with an electric mixer or stand mixer until it begins to thicken.
- Add the powdered erythritol and vanilla extract, then continue whipping until soft peaks form. Be careful not to overwhip.
- Once whipped, set the filling aside.
Step 3: Assemble the Cream Puffs
- Once the cream puffs have cooled completely, carefully cut them in half horizontally.
- Fill the bottom half of each puff with a generous spoonful of the whipped cream.
- Place the top half back on, gently pressing down.
- If desired, dust with a little more powdered erythritol or cocoa powder for garnish.
Tips:
- For extra flavor, you can add a splash of almond extract or vanilla bean paste to the dough or whipped cream.
- Make sure to let the cream puffs cool completely before filling them to avoid soggy shells.
- If you want a sturdier shell, you can bake the dough a few minutes longer for extra crispness.
