2 cups all-purpose flour
1 teaspoon salt
1 teaspoon baking powder
1/4 teaspoon baking soda
1/4 cup vegetable oil
3/4 cup warm water
Additional flour for dusting
In a large bowl, whisk together the flour, salt, baking powder, and baking soda.
Add the vegetable oil to the bowl and use a fork to mix until the mixture is crumbly.
Gradually add the warm water to the bowl, mixing until the dough comes together.
Knead the dough on a floured surface for 5-10 minutes, until it becomes smooth and elastic.
Return the dough to the bowl, cover it with a damp cloth, and let it rest for 30 minutes.
After 30 minutes, divide the dough into 8 equal portions.
Roll out each portion on a floured surface to form a circle that is about 1/4 inch thick.
Heat a non-stick pan over medium-high heat.
Once the pan is hot, place one of the flatbreads in the pan and cook for about 1 minute on each side, or until it becomes lightly golden and puffs up slightly.
Repeat with the remaining flatbreads.
Serve the flatbreads warm, either on their own or with your favorite vegan dip or spread.
