Ingredients

  • 1 cup plain Greek yogurt (unsweetened, preferably 0–2%)
  • Β½ cup low-fat cottage cheese
  • 1 scoop vanilla protein powder, preferably low-carb/no-added-sugar
  • 1 cup fresh strawberries, chopped
  • 1–2 tbsp unsweetened almond milk (as needed)
  • 1–2 tsp sugar-free cheesecake pudding mix β€” optional, for extra cheesecake flavor
  • Β½ tsp vanilla extract
  • Sweetener to taste, such as stevia/monk fruit/erythritol
  • 1 tbsp chia seeds β€” optional

Directions

  1. Blend the Greek yogurt, cottage cheese, protein powder, vanilla, and almond milk until completely smooth and creamy.
  2. Add the strawberries and pulse briefly, leaving a few small strawberry pieces.
  3. Stir in the cheesecake pudding mix and sweetener if using.
  4. Refrigerate for 30–60 minutes so it thickens.
  5. Divide into 4 small cups and top with a few sliced strawberries.

Diabetes-friendly tip: Choose protein powder and yogurt with little or no added sugar, and keep the strawberries measured rather than adding an unlimited amount. The exact carbohydrate count will vary substantially by the protein powder and yogurt brands.
