
For a diabetes-friendly version of crispy cabbage, carrot & cheese fritters, use:
Ingredients
- 2 cups finely shredded cabbage
- ½ cup grated carrot
- ½ cup grated low-fat cheese (cheddar or mozzarella)
- 1 egg
- 2–3 tbsp chickpea flour (besan) or almond flour
- 1–2 tbsp finely chopped onion
- 1 green chili, optional
- ½ tsp cumin seeds
- ½ tsp black pepper
- ¼ tsp turmeric
- Salt, to taste
- Fresh coriander, chopped
- 1–2 tsp olive/canola oil for pan-frying
To make it more diabetes-friendly
- Keep the carrot and besan moderate because they contribute carbohydrates.
- Avoid regular white flour and breadcrumbs.
- Use plenty of cabbage for fiber and volume.
- Prefer pan-frying with a small amount of oil rather than deep-frying.
- Serve with unsweetened yogurt/raita rather than sweet chutney.
For a lower-carb option, you can replace the besan with 1–2 tbsp almond flour.
