Slow Cooker Cheddar Corn with Bacon

Ingredients:

  • 1 medium head cauliflower, chopped into small pieces (corn substitute)
  • 1 cup heavy cream
  • 1 ½ cups shredded sharp cheddar cheese
  • 4 oz cream cheese, softened
  • 4 slices crispy bacon, crumbled
  • ½ teaspoon garlic powder
  • ½ teaspoon onion powder
  • ½ teaspoon smoked paprika
  • Salt & pepper to taste
  • 2 tablespoons butter
  • ¼ cup chicken broth (for extra creaminess)
  • 1 tablespoon chopped fresh chives (for garnish, optional)

Instructions:

  1. Prepare the slow cooker: Lightly grease your slow cooker with butter or cooking spray.
  2. Add ingredients: Place the chopped cauliflower, heavy cream, cream cheese, butter, and seasonings in the slow cooker. Pour in the chicken broth for extra moisture.
  3. Cook on low for 3-4 hours or until the cauliflower is tender. Stir occasionally to ensure even cooking.
  4. Add cheese: Once the cauliflower is soft, stir in shredded cheddar cheese and crumbled bacon. Let it melt into the mixture for another 15-20 minutes.
  5. Serve: Garnish with fresh chives and extra bacon crumbles. Enjoy this creamy, cheesy, and smoky keto side dish!
