Ingredients
- 8 small flour tortillas
- 1½ cups shredded mozzarella cheese
- 1 cup sliced pepperoni, chopped
- ½ cup pizza sauce, plus more for dipping
- ½ teaspoon Italian seasoning
- ¼ teaspoon garlic powder
- 2 tablespoons grated Parmesan cheese
- 1 tablespoon butter or olive oil

Instructions
- Prepare the filling: In a bowl, combine mozzarella, chopped pepperoni, Italian seasoning, garlic powder, and Parmesan.
- Assemble: Spread about 1 tablespoon of pizza sauce over one half of each tortilla. Add the cheese and pepperoni mixture, then fold the tortilla in half.
- Cook: Heat a skillet over medium heat and lightly grease it with butter or olive oil. Place the quesadillas in the skillet and cook for 2–3 minutes per side, until golden brown and the cheese is completely melted.
- Slice: Transfer to a cutting board and let cool for 1–2 minutes. Cut each quesadilla into wedges.
- Serve: Serve hot with extra warm pizza sauce for dipping.
Tips
- Add mushrooms, bell peppers, olives, or cooked sausage for more pizza flavor.
- Don’t overfill the quesadillas, or the cheese may spill out while cooking.
- For extra crispiness, cook them in a lightly oiled skillet without covering.
