  • Pour the pasteurized liquid egg whites and cream of tartar into the stand mixer bowl.
  • Whisk on medium-high speed for 2 minutes until light, foamy, and starting to hold soft white tracks.
  • Sift the whey protein isolate, zero-calorie sweetener, and xanthan gum together into a small bowl.
  • Turn the mixer down to low. Gradually add the dry protein blend into the whipped egg whites, one spoonful at a time, to avoid powder clouds.

4. Stream in Liquid and Whip to Maximum Volume
