Ingredients

1 lb 450g smoked sausage, sliced into rounds
1.5 lb 680g potatoes, cut into 1-inch cubes (Yukon Gold or red potatoes work best)
1 bell pepper sliced
1 small onion sliced
Seasoning & Oil
3 tbsp olive oil
1 tsp garlic powder
1 tsp smoked paprika
½ tsp onion powder
½ tsp dried thyme or Italian seasoning
¾ tsp salt adjust to taste
½ tsp black pepper
½ tsp red pepper flakes optional for heat
Instructions
Preheat the Oven
Set oven to 400°F (200°C).

Line a baking sheet with parchment paper or lightly grease it.
Prep the Ingredients
Slice the sausage into rounds.
Cube the potatoes evenly.
Slice the pepper and onion.
Season Everything
Add sausage, potatoes, and vegetables to a large bowl.

Roast
