Mandarin Orange Salad


Ingredients:
- 2 cups mixed greens (spinach, arugula, or romaine)
- ½ cup cucumber, sliced
- ¼ cup red onion, thinly sliced
- ¼ cup pecans or walnuts, toasted
- ½ avocado, sliced
- ¼ cup feta cheese (or goat cheese)
- ½ cup sugar-free mandarin orange slices (fresh or canned in juice, drained)
Dressing:
- 2 tbsp olive oil
- 1 tbsp apple cider vinegar (or lemon juice)
- ½ tsp Dijon mustard
- ½ tsp monk fruit sweetener (or erythritol)
- Salt & pepper to taste
Instructions:
- In a large bowl, combine mixed greens, cucumber, red onion, pecans, avocado, and feta cheese.
- Add the sugar-free mandarin orange slices.
- In a small bowl, whisk together all dressing ingredients until well combined.
- Drizzle the dressing over the salad and toss gently.
- Serve fresh and enjoy!
