Keto Snickers Brownies

Ingredients:

For the Brownies:

  • 1/2 cup almond flour
  • 1/4 cup unsweetened cocoa powder
  • 1/3 cup keto-friendly sweetener (like allulose or erythritol)
  • 1/4 tsp salt
  • 1/4 tsp baking powder
  • 2 large eggs
  • 1/4 cup butter (melted)
  • 1 tsp vanilla extract
  • 1/4 cup sugar-free chocolate chips

For the Peanut Layer:

  • 1/2 cup roasted peanuts (unsalted)
  • 1/4 cup sugar-free peanut butter

For the Keto Caramel:

  • 1/4 cup butter
  • 1/4 cup heavy cream
  • 3 tbsp keto sweetener (brown sugar alternative works best)
  • 1/2 tsp vanilla extract
  • Pinch of salt

Instructions:

1️⃣ Prepare the Brownies:

  • Preheat oven to 325°F (163°C). Line a baking dish with parchment paper.
  • In a bowl, mix almond flour, cocoa powder, sweetener, salt, and baking powder.
  • In another bowl, whisk eggs, melted butter, and vanilla.
  • Combine wet and dry ingredients, then fold in chocolate chips.
  • Pour batter into the pan and bake for 20-25 minutes. Let cool.

2️⃣ Make the Caramel Sauce:

  • In a saucepan, melt butter over low heat.
  • Add sweetener and stir until dissolved.
  • Pour in heavy cream, vanilla, and salt. Simmer for 3-4 minutes until thickened. Let cool slightly.

3️⃣ Assemble the Snickers Layer:

  • Spread peanut butter over the cooled brownies.
  • Sprinkle roasted peanuts on top.
  • Drizzle with caramel sauce.

4️⃣ Set & Serve:

  • Let the brownies chill in the fridge for 30-40 minutes.
  • Slice and enjoy a keto-friendly Snickers-inspired treat!
