Keto Cauliflower Mac and Cheese 

Ingredients:

For the Cauliflower:

  • 1 large head of cauliflower (about 2 pounds), cut into bite-sized florets
  • 1 tablespoon olive oil
  • Salt and pepper to taste

For the Cheese Sauce:

  • 2 cups shredded sharp cheddar cheese (or a mix of your favorite cheeses)
  • 1 cup heavy cream
  • 1/2 cup unsweetened almond milk (or any low-carb milk alternative)
  • 3 tablespoons unsalted butter
  • 2 tablespoons cream cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon paprika (optional, for a little extra flavor)
  • Salt and pepper to taste

For Topping (optional):

  • 1/2 cup grated Parmesan cheese
  • 1/4 cup almond flour or crushed pork rinds (for a crunchy topping)
  • 1 tablespoon chopped fresh parsley (for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C).
  2. Prepare Cauliflower:
    • Toss the cauliflower florets with olive oil, salt, and pepper.
    • Spread them out in a single layer on a baking sheet.
    • Roast in the preheated oven for about 20-25 minutes, or until tender and lightly golden. Set aside.
  3. Make the Cheese Sauce:
    • In a medium saucepan, melt the butter over medium heat.
    • Add the cream cheese and stir until smooth.
    • Slowly add the heavy cream and almond milk, whisking continuously.
    • Bring to a simmer, then reduce the heat and continue to whisk until the mixture is smooth and slightly thickened.
    • Add the shredded cheddar cheese a handful at a time, stirring until melted and smooth.
    • Stir in garlic powder, onion powder, paprika (if using), salt, and pepper to taste. Adjust seasoning as needed.
  4. Combine and Bake:
    • In a large mixing bowl, combine the roasted cauliflower with the cheese sauce, stirring gently to coat the cauliflower evenly.
    • Transfer the mixture to a baking dish (about 8×8 inches or similar).
  5. Add Topping:
    • In a small bowl, mix the grated Parmesan cheese with the almond flour or crushed pork rinds.
    • Sprinkle this mixture evenly over the top of the cauliflower and cheese.
  6. Bake:
    • Bake in the preheated oven for 15-20 minutes, or until the topping is golden brown and the cheese sauce is bubbly.
  7. Garnish:
    • Let the dish cool for a few minutes before serving.
    • Garnish with chopped fresh parsley if desired.

Tips:

  • For extra flavor, you can add cooked bacon pieces or sautéed onions to the cheese sauce.
  • If you prefer a creamier texture, you can blend the cheese sauce ingredients in a blender before mixing with the cauliflower.
