Ingredients:

  • 1/4 cup coconut flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 large egg
  • 1/4 cup melted coconut oil or butter
  • 1/4 cup grated Parmesan cheese

For the Topping:

  • 1 cup ricotta cheese
  • 1/2 cup fresh blackberries
  • 1 tablespoon honey (or keto-friendly sweetener like erythritol, adjust to taste)
  • 1 teaspoon lemon zest
  • Fresh thyme or basil for garnish (optional)
  • A drizzle of balsamic glaze (optional)

Instructions:

  1. Preheat Oven:
