Keto Barbeque Chicken Braid

Ingredients:

For the Chicken Filling:

  • 2 cups cooked chicken breast, shredded or chopped
  • 1/2 cup sugar-free BBQ sauce (or to taste)
  • 1/2 cup shredded cheddar cheese
  • 1/4 cup finely chopped red onion (optional)
  • 1/4 cup chopped fresh cilantro or parsley (optional)
  • Salt and pepper to taste

For the Dough:

  • 1 1/2 cups almond flour
  • 1/4 cup coconut flour
  • 1/4 cup grated Parmesan cheese
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/4 cup butter, melted
  • 1 large egg

For Assembly:

  • 1 egg, beaten (for egg wash)
  • Extra shredded cheese for topping (optional)

Instructions:

  1. Prepare the Chicken Filling:
    • In a bowl, mix the shredded chicken with BBQ sauce until well combined.
    • Stir in shredded cheddar cheese, red onion, cilantro, salt, and pepper. Set aside.
  2. Make the Dough:
    • Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
    • In a large bowl, combine almond flour, coconut flour, Parmesan cheese, baking powder, and salt.
    • Add melted butter and egg to the dry ingredients, mixing until a dough forms. If the dough is too sticky, you can chill it in the refrigerator for about 10-15 minutes to make it easier to work with.
  3. Assemble the Braid:
    • Place the dough between two pieces of parchment paper and roll it out into a rectangle, about 1/4 inch thick.
    • Remove the top piece of parchment paper and transfer the dough to your prepared baking sheet.
    • Cut strips about 1 inch wide along both long sides of the rectangle, leaving the center portion intact for the filling.
    • Spread the BBQ chicken mixture evenly down the center of the dough.
    • Fold the strips of dough over the filling, alternating sides to create a braid pattern. Pinch the ends to seal.
  4. Bake:
    • Brush the top of the braid with the beaten egg for a golden finish.
    • Bake in the preheated oven for 25-30 minutes, or until the dough is golden brown and the filling is heated through.
  5. Serve:
    • Allow the braid to cool slightly before slicing. Optionally, sprinkle extra shredded cheese on top while it’s still warm.
