KETO KRISPY KREME DONUTS

Ingredients

For the Donuts:

  • 1 ½ cups almond flour
  • ¼ cup coconut flour
  • ¼ cup erythritol (or your preferred keto sweetener)
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 3 large eggs
  • ¼ cup unsweetened almond milk (or any low-carb milk)
  • ¼ cup melted butter (or coconut oil)
  • 1 tsp vanilla extract

For the Glaze:

  • ½ cup powdered erythritol
  • 2 tbsp unsalted butter
  • 2 tbsp heavy cream
  • 1 tsp vanilla extract
  • 1 tbsp water (optional, for thinning)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a donut pan or use a non-stick donut pan.
  2. Combine dry ingredients: In a large bowl, whisk together almond flour, coconut flour, erythritol, baking powder, baking soda, and salt.
  3. Mix wet ingredients: In a separate bowl, beat the eggs, then mix in the almond milk, melted butter, and vanilla extract.
  4. Combine wet and dry ingredients: Slowly add the wet ingredients to the dry ingredients, stirring until just combined. The batter should be thick but not dry.
  5. Fill the donut pan: Spoon the batter into the donut pan, filling each cavity about ¾ full. Smooth the tops with a spatula.
  6. Bake: Bake for 12-15 minutes, or until the donuts are golden brown and a toothpick inserted into the center comes out clean.
  7. Cool: Allow the donuts to cool in the pan for about 5 minutes, then transfer them to a wire rack to cool completely.
  8. Prepare the glaze: While the donuts are cooling, melt the butter in a small saucepan over low heat. Stir in the powdered erythritol, heavy cream, and vanilla extract until smooth. If the glaze is too thick, you can add a little water to reach your desired consistency.
  9. Glaze the donuts: Dip the cooled donuts into the glaze, allowing excess to drip off, and place them back on the wire rack to set.
  10. Enjoy: Once the glaze has set, your keto donuts are ready to enjoy!

Feel free to experiment with flavors or add a sprinkle of cinnamon or nutmeg to the batter for a twist.
