Keto Banoffee Pie

Ingredients:

For the Crust:

  • 1 1/2 cups almond flour
  • 1/4 cup unsweetened shredded coconut (optional for extra texture)
  • 1/4 cup melted butter (or coconut oil)
  • 2 tbsp erythritol or another keto-friendly sweetener
  • 1/4 tsp salt

For the Toffee Filling:

  • 1/2 cup unsalted butter
  • 1/2 cup heavy cream
  • 1/4 cup erythritol or another keto-friendly sweetener
  • 1/4 tsp vanilla extract
  • 1/4 tsp salt

For the Topping:

  • 2 large ripe bananas, sliced (optional, can be skipped to reduce carbs)
  • 1 cup heavy whipping cream
  • 2 tbsp powdered erythritol or another keto-friendly sweetener
  • 1 tsp vanilla extract

Instructions:

1. Prepare the Crust:

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine the almond flour, shredded coconut (if using), melted butter, sweetener, and salt.
  3. Press the mixture evenly into the bottom and up the sides of a 9-inch pie dish.
  4. Bake for 10-12 minutes, or until golden brown. Let it cool completely before adding the filling.

2. Make the Toffee Filling:

  1. In a saucepan, melt the butter over medium heat.
  2. Stir in the erythritol and salt, then add the heavy cream.
  3. Bring the mixture to a simmer, stirring constantly, and cook for 5-7 minutes until it thickens. Be careful not to let it boil too vigorously.
  4. Remove from heat and stir in the vanilla extract.
  5. Allow the toffee mixture to cool slightly before pouring it over the cooled crust. Spread it evenly.

3. Assemble the Pie:

  1. If using bananas, arrange the banana slices over the toffee filling once it has set. You can skip this step if you prefer to keep it lower in carbs.
  2. In a mixing bowl, whip the heavy cream with the sweetener and vanilla extract until soft peaks form.
  3. Spread the whipped cream over the bananas or directly over the toffee if not using bananas.
  4. Optional: Garnish with a few shavings of dark chocolate or a sprinkle of cocoa powder.

4. Chill and Serve:

  1. Refrigerate the pie for at least 2 hours to let it set properly.
  2. Slice and serve chilled.
