Keto Snickers Brownies

Ingredients

For the Brownies:

  • 1/2 cup unsalted butter
  • 1 cup erythritol (or your preferred keto sweetener)
  • 1/2 cup unsweetened cocoa powder
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup almond flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon baking powder

For the Snickers Layer:

  • 1/2 cup natural peanut butter (smooth or crunchy)
  • 1/4 cup powdered erythritol (or your preferred keto sweetener)
  • 1/2 cup chopped peanuts (unsalted)
  • 1/4 teaspoon sea salt

For the Chocolate Ganache:

  • 1/2 cup heavy cream
  • 1/2 cup sugar-free chocolate chips or chopped sugar-free chocolate

Instructions

1. Make the Brownies:

  1. Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
  2. In a microwave-safe bowl, melt the butter. Stir in the erythritol and cocoa powder until well combined.
  3. Beat in the eggs, one at a time, then stir in the vanilla extract.
  4. Add the almond flour, salt, and baking powder, mixing until smooth.
  5. Pour the brownie batter into the prepared pan and spread it evenly.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean. Let the brownies cool completely in the pan on a wire rack.

2. Prepare the Snickers Layer:

  1. In a medium bowl, mix the peanut butter, powdered erythritol, and sea salt until smooth.
  2. Stir in the chopped peanuts.
  3. Once the brownies have cooled, spread the peanut butter mixture evenly over the top of the brownies.

3. Make the Chocolate Ganache:

  1. In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
  2. Remove from heat and add the sugar-free chocolate chips. Let sit for 2 minutes, then stir until the chocolate is completely melted and smooth.
  3. Pour the ganache over the peanut butter layer, spreading it evenly.

4. Chill and Serve:

  1. Refrigerate the brownies for at least 2 hours or until the ganache is set.
  2. Once set, lift the brownies out of the pan using the parchment paper and cut into squares.
