Keto Snickers Brownies
Ingredients
For the Brownies:
- 1/2 cup unsalted butter
- 1 cup erythritol (or your preferred keto sweetener)
- 1/2 cup unsweetened cocoa powder
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/2 cup almond flour
- 1/4 teaspoon salt
- 1/2 teaspoon baking powder
For the Snickers Layer:
- 1/2 cup natural peanut butter (smooth or crunchy)
- 1/4 cup powdered erythritol (or your preferred keto sweetener)
- 1/2 cup chopped peanuts (unsalted)
- 1/4 teaspoon sea salt
For the Chocolate Ganache:
- 1/2 cup heavy cream
- 1/2 cup sugar-free chocolate chips or chopped sugar-free chocolate

Instructions
1. Make the Brownies:
- Preheat your oven to 350°F (175°C) and line an 8×8 inch baking pan with parchment paper.
- In a microwave-safe bowl, melt the butter. Stir in the erythritol and cocoa powder until well combined.
- Beat in the eggs, one at a time, then stir in the vanilla extract.
- Add the almond flour, salt, and baking powder, mixing until smooth.
- Pour the brownie batter into the prepared pan and spread it evenly.
- Bake for 20-25 minutes, or until a toothpick inserted into the center comes out mostly clean. Let the brownies cool completely in the pan on a wire rack.
2. Prepare the Snickers Layer:
- In a medium bowl, mix the peanut butter, powdered erythritol, and sea salt until smooth.
- Stir in the chopped peanuts.
- Once the brownies have cooled, spread the peanut butter mixture evenly over the top of the brownies.
3. Make the Chocolate Ganache:
- In a small saucepan, heat the heavy cream over medium heat until it begins to simmer.
- Remove from heat and add the sugar-free chocolate chips. Let sit for 2 minutes, then stir until the chocolate is completely melted and smooth.
- Pour the ganache over the peanut butter layer, spreading it evenly.
4. Chill and Serve:
- Refrigerate the brownies for at least 2 hours or until the ganache is set.
- Once set, lift the brownies out of the pan using the parchment paper and cut into squares.
