🍫 Chocolate Scoop Delight — Diabetes-Friendly

Ingredients

  • 1 cup plain, unsweetened Greek yogurt
  • 2 tbsp unsweetened cocoa powder
  • 1–2 tbsp monk fruit or stevia sweetener, to taste
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened almond milk, as needed
  • 2 tbsp chopped walnuts or almonds
  • ¼ cup fresh strawberries or raspberries, chopped
  • Optional: 1 tsp unsweetened dark chocolate, finely grated

Method

  1. Mix the Greek yogurt, cocoa powder, vanilla and sweetener until completely smooth.
  2. Add almond milk a little at a time until you get a thick, creamy consistency.
  3. Fold in the nuts and berries.
  4. Refrigerate for 30–60 minutes.
  5. Scoop into 4 small portions and serve chilled.
  6. Add a tiny sprinkle of grated dark chocolate if desired.
