🍫 Chocolate Scoop Delight — Diabetes-Friendly

Ingredients
- 1 cup plain, unsweetened Greek yogurt
- 2 tbsp unsweetened cocoa powder
- 1–2 tbsp monk fruit or stevia sweetener, to taste
- 1 tsp vanilla extract
- 2 tbsp unsweetened almond milk, as needed
- 2 tbsp chopped walnuts or almonds
- ¼ cup fresh strawberries or raspberries, chopped
- Optional: 1 tsp unsweetened dark chocolate, finely grated
Method
- Mix the Greek yogurt, cocoa powder, vanilla and sweetener until completely smooth.
- Add almond milk a little at a time until you get a thick, creamy consistency.
- Fold in the nuts and berries.
- Refrigerate for 30–60 minutes.
- Scoop into 4 small portions and serve chilled.
