
๐๐ฅ High-Protein Chicken & Zucchini Stir-Fry
โ Ingredients (Serves 2โ3)
- 2 large chicken breasts (thinly sliced)
- 2 medium zucchinis (sliced into half-moons)
- 2 cloves garlic (minced)
- 2 tbsp soy sauce (low sodium)
- 1 tbsp olive oil or sesame oil
- 1 tsp fresh ginger (minced)
- Salt & pepper to taste
- Optional: sliced green onions and chili flakes
๐ช Instructions
- Prep chicken and zucchini
- Slice chicken thin for quick cooking
- Slice zucchini into half-moons or thin rounds
- Cook chicken
- Heat oil in a large pan or wok over medium-high heat
- Add garlic and ginger, sautรฉ for 30 seconds
- Add chicken, season with salt & pepper
- Stir-fry 5โ6 minutes until chicken is cooked through and slightly browned
- Remove chicken and set aside
- Cook zucchini
- In the same pan, add a little more oil if needed
- Add zucchini and stir-fry 3โ4 minutes until just tender but still crisp
- Combine & season
- Return chicken to the pan
- Add soy sauce and toss everything together for 1โ2 minutes
- Serve
- Garnish with green onions and chili flakes if using
- Serve hot, optionally with brown rice or cauliflower rice
