๐Ÿ—๐Ÿฅ’ High-Protein Chicken & Zucchini Stir-Fry

โœ… Ingredients (Serves 2โ€“3)

  • 2 large chicken breasts (thinly sliced)
  • 2 medium zucchinis (sliced into half-moons)
  • 2 cloves garlic (minced)
  • 2 tbsp soy sauce (low sodium)
  • 1 tbsp olive oil or sesame oil
  • 1 tsp fresh ginger (minced)
  • Salt & pepper to taste
  • Optional: sliced green onions and chili flakes

๐Ÿ”ช Instructions

  1. Prep chicken and zucchini
    • Slice chicken thin for quick cooking
    • Slice zucchini into half-moons or thin rounds
  2. Cook chicken
    • Heat oil in a large pan or wok over medium-high heat
    • Add garlic and ginger, sautรฉ for 30 seconds
    • Add chicken, season with salt & pepper
    • Stir-fry 5โ€“6 minutes until chicken is cooked through and slightly browned
    • Remove chicken and set aside
  3. Cook zucchini
    • In the same pan, add a little more oil if needed
    • Add zucchini and stir-fry 3โ€“4 minutes until just tender but still crisp
  4. Combine & season
    • Return chicken to the pan
    • Add soy sauce and toss everything together for 1โ€“2 minutes
  5. Serve
    • Garnish with green onions and chili flakes if using
    • Serve hot, optionally with brown rice or cauliflower rice
