- 2 cups baby carrots
- 1 tbsp olive oil or coconut oil
- 1β2 tbsp honey (or maple syrup)
- 2 tbsp Greek yogurt (for creamy protein glaze)
- Salt & pepper, to taste
- Optional: fresh parsley or thyme for garnish

- Prep carrots
- Wash and peel if needed
- Pat dry
- Cook carrots
- Heat oil in a skillet over medium heat
- Add carrots and sautΓ© 5β6 minutes until slightly tender
- Make glaze
- Stir honey and Greek yogurt together in a small bowl
- Pour over carrots
- Continue cooking 3β5 minutes, stirring often until carrots are tender and glazed
- Season & serve
- Add salt & pepper to taste
- Garnish with parsley or thyme
