Hawaiian BBQ Marinated Boneless Chicken Thighs
Ingredients
For the marinade:
- 1/2 cup soy sauce
- 1/4 cup pineapple juice
- 1/4 cup brown sugar
- 2 tablespoons ketchup
- 2 tablespoons rice vinegar
- 2 tablespoons vegetable oil
- 1 tablespoon ginger, minced
- 2 cloves garlic, minced
- 1 teaspoon sesame oil
- 1/4 teaspoon red pepper flakes (optional, for a bit of heat)
For the chicken:
- 1.5 to 2 pounds boneless, skinless chicken thighs
- Chopped green onions and sesame seeds for garnish (optional)
Instructions
- Prepare the marinade:
- In a medium bowl, whisk together the soy sauce, pineapple juice, brown sugar, ketchup, rice vinegar, vegetable oil, minced ginger, minced garlic, sesame oil, and red pepper flakes (if using).
- Marinate the chicken:
- Place the boneless chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, making sure each piece is well-coated.
- Seal the bag or cover the dish with plastic wrap and refrigerate for at least 2 hours, or up to overnight for the best flavor.
- Cook the chicken:
- Preheat your grill to medium-high heat. If you don’t have a grill, you can use a grill pan or a regular skillet on the stove.
- Remove the chicken from the marinade, allowing any excess to drip off. Discard the marinade.
- Grill the chicken thighs for about 5-7 minutes per side, or until they reach an internal temperature of 165°F (74°C) and have a nice char.
- If using a grill pan or skillet, cook the chicken over medium-high heat, flipping once until cooked through and nicely browned.
- Serve:
- Transfer the cooked chicken to a serving platter. Garnish with chopped green onions and sesame seeds if desired.
- Serve the Hawaiian BBQ marinated chicken thighs with steamed rice, grilled pineapple, and a side of your favorite vegetables.
