Ingredients
1 (8-ounce) package of softened cream cheese
3/4 cup granulated sugar
1 cup whipped heavy cream
1 (20-ounce) can of drained crushed pineapple
1 (10-ounce) package of slightly thawed and chopped frozen strawberries or raspberries
1 (11-ounce) can of drained mandarin oranges
1/2 cup chopped pecans
1/3 cup halved maraschino cherries
2 sliced ripe bananas
Juice of 1 lemon
Directions
Beat the softened cream cheese with granulated sugar until smooth.
Fold in the whipped heavy cream.
Add the drained crushed pineapple, slightly thawed and chopped frozen strawberries or raspberries, and drained mandarin oranges.
Mix in the chopped pecans and halved maraschino cherries.
Toss the sliced bananas in the juice of 1 lemon to prevent browning, then fold them into the mixture.
Spread the mixture into a 9×13-inch pan, cover, and freeze for at least 4 hours.
Before serving, let it sit at room temperature for 10-15 minutes, then cut into squares.
Variations & Tips
For a tropical twist, consider adding shredded coconut or swapping pecans for macadamia nuts. You can also experiment with different fruits, such as mango or kiwi, to suit your taste.
If you prefer a less sweet version, reduce the amount of sugar or use fresh fruit instead of canned. For a more festive presentation, garnish with fresh mint leaves or a dollop of whipped cream before serving.
