Ginger Veggie Bites

ingredients:
- 1 cup cooked vegetables (broccoli, carrots, peas) (240 ml), finely chopped
- 1/2 cup chickpea flour (120 ml)
- 1 tablespoon nutritional yeast (15 ml)
- 1 teaspoon ground turmeric
- 1 teaspoon grated fresh ginger
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- 2 tablespoons olive oil (30 ml)
directions:
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine the finely chopped cooked vegetables, chickpea flour, nutritional yeast, ground turmeric, grated fresh ginger, and garlic powder.
- Season with salt and pepper to taste. Mix everything together well until a cohesive dough forms. If the mixture is too dry, add a tiny bit of water (teaspoon by teaspoon) until it comes together.
- Roll the dough into small bite-sized balls (about 1 inch in diameter) and place them on the prepared baking sheet.
- Lightly brush the veggie bites with olive oil.
- Bake for 20-25 minutes, or until they are golden brown and slightly firm to the touch.
- Allow the veggie bites to cool slightly before serving. They can be enjoyed warm or at room temperature.
