Easy Cheesy Sausage Biscuit Bites

Ingredients:

  • 1 cup almond flour
  • 1 teaspoon baking powder
  • 1 large egg
  • 1 ½ cups shredded mozzarella cheese
  • 4 oz cream cheese, softened
  • ½ pound cooked sausage, crumbled or ground (spicy or mild, as preferred)
  • ½ teaspoon garlic powder (optional)
  • ½ teaspoon onion powder (optional)
  • Salt and pepper to taste

Instructions:

  1. Preheat the Oven: Set your oven to 375°F (190°C). Line a baking sheet with parchment paper or use a silicone baking mat.
  2. Prepare the Cheese Mixture: In a microwave-safe bowl, combine the shredded mozzarella cheese and cream cheese. Microwave for about 30 seconds, stir, and microwave for another 20-30 seconds until melted and smooth.
  3. Mix the Dough: In a separate bowl, whisk together the almond flour, baking powder, garlic powder, onion powder, salt, and pepper. Add the melted cheese mixture and the egg. Mix until a dough forms.
  4. Add the Sausage: Stir the cooked sausage into the dough until evenly combined.
  5. Form Biscuit Bites: Scoop small portions of the dough (about 1-2 tablespoons each) and roll into balls. Place them on the prepared baking sheet.
  6. Bake: Bake for 12-15 minutes or until golden brown.
  7. Cool and Serve: Let them cool slightly before serving. Enjoy warm!
