Hawaiian Roll Bundt Cake

Ingredients

For the Dough:

  • 2 cups almond flour
  • 1/3 cup coconut flour
  • 1 tbsp baking powder
  • 2 tbsp sweetener (erythritol or monk fruit)
  • 1 tsp xanthan gum
  • 2 large eggs
  • 1/4 cup melted butter
  • 1/4 cup sour cream
  • 1/2 cup warm water

For the Sweet Pineapple Filling (Optional):

  • 1/4 cup crushed pineapple (sugar-free or very minimal sugar)
  • 2 tbsp cream cheese
  • 1 tbsp sweetener

For the Glaze:

  • 2 tbsp melted butter
  • 1 tbsp heavy cream
  • 1/2 tsp vanilla extract
  • Sweetener to taste

Instructions

Step 1: Prepare the Dough

  1. Preheat oven to 350°F (175°C). Grease a bundt cake pan thoroughly.
  2. In a large bowl, whisk together almond flour, coconut flour, baking powder, sweetener, and xanthan gum.
  3. Add eggs, melted butter, sour cream, and warm water to the dry ingredients. Mix well until a dough forms.

Step 2: Assemble the Bundt Cake

  1. If using the pineapple filling, mix the crushed pineapple, cream cheese, and sweetener in a small bowl.
  2. Place half of the dough in the prepared bundt pan, pressing it down evenly.
  3. Spread the pineapple filling on top (if using). Then cover with the remaining dough.

Step 3: Bake

  1. Bake in the preheated oven for 25-30 minutes or until golden brown and a toothpick comes out clean.
  2. Let the cake cool in the pan for 10-15 minutes before carefully flipping it onto a plate.

Step 4: Prepare the Glaze

  1. Mix melted butter, heavy cream, vanilla, and sweetener until smooth.
  2. Drizzle the glaze over the warm bundt cake.

Serving Tips

  • Sprinkle with shredded coconut for extra tropical flair (use unsweetened for keto).
  • Pair it with sugar-free whipped cream or keto-friendly vanilla ice cream.
