Hawaiian Roll Bundt Cake

Ingredients
For the Dough:
- 2 cups almond flour
- 1/3 cup coconut flour
- 1 tbsp baking powder
- 2 tbsp sweetener (erythritol or monk fruit)
- 1 tsp xanthan gum
- 2 large eggs
- 1/4 cup melted butter
- 1/4 cup sour cream
- 1/2 cup warm water
For the Sweet Pineapple Filling (Optional):
- 1/4 cup crushed pineapple (sugar-free or very minimal sugar)
- 2 tbsp cream cheese
- 1 tbsp sweetener
For the Glaze:
- 2 tbsp melted butter
- 1 tbsp heavy cream
- 1/2 tsp vanilla extract
- Sweetener to taste
Instructions
Step 1: Prepare the Dough
- Preheat oven to 350°F (175°C). Grease a bundt cake pan thoroughly.
- In a large bowl, whisk together almond flour, coconut flour, baking powder, sweetener, and xanthan gum.
- Add eggs, melted butter, sour cream, and warm water to the dry ingredients. Mix well until a dough forms.
Step 2: Assemble the Bundt Cake
- If using the pineapple filling, mix the crushed pineapple, cream cheese, and sweetener in a small bowl.
- Place half of the dough in the prepared bundt pan, pressing it down evenly.
- Spread the pineapple filling on top (if using). Then cover with the remaining dough.
Step 3: Bake
- Bake in the preheated oven for 25-30 minutes or until golden brown and a toothpick comes out clean.
- Let the cake cool in the pan for 10-15 minutes before carefully flipping it onto a plate.
Step 4: Prepare the Glaze
- Mix melted butter, heavy cream, vanilla, and sweetener until smooth.
- Drizzle the glaze over the warm bundt cake.

- Sprinkle with shredded coconut for extra tropical flair (use unsweetened for keto).
- Pair it with sugar-free whipped cream or keto-friendly vanilla ice cream.
