Curry Coconut Ramen Noodles Veggies
Add in garlic – shallots & ginger ( Sautee)
Add 1 can of coconut milk & stir, then add
your curry paste…stir some more and let simmer for about 7 minutes or until a little thick. Add a few splashes of soy sauce. Now let that sit.
In a boiling pot add your Ramen noodles,when almost done also add your veggies to the boiling water w/ the noodles for about 5 minutes.
Drain water off the noodles + veggies and add to the curry sauce stir and your done.
Veggies- Broccoli – Red Bell Peppers
Mushrooms- carrots- a few hot peppers- lemon wedges oh and snap peas.
Salt and Pepper to your liking. If you want it more soup like ( which I did ) add a broth or more coconut milk.
My color isn’t a deep red because I didn’t use that much curry paste, for fear of not liking it…
