VEGAN SPAGHETTI SALAD
Ingredients:
1 lb. Whole wheat spaghetti noodles cooked to your liking, rinsed and drained well
1 ½ C. Cherry tomatoes sliced in half
1 Cucumber diced
2 Zucchini diced
1 Red bell pepper diced
1 Green bell pepper diced
1 Red onion diced
1 Can Black olives sliced or diced
1/4 C. Fresh basil chopped
1/4 C. Fresh parsley chopped
1/4 C. Nutritional yeast
1/4 C. Cashew cheese (see [how to make it])
1/4 C. Lemon juice
2 Tbsp. Olive oil
Salt and pepper to taste
How To Make Vegan Spaghetti Salad:
Cook the whole wheat spaghetti to your liking, rinse under cold water and drain well.
In a large mixing bowl, toss the spaghetti with the nutritional yeast and cashew cheese until well coated.
In a small mixing bowl, whisk together the lemon juice, olive oil, salt and pepper to make a tangy dressing.
In another large mixing bowl, combine the cherry tomatoes, cucumber, zucchini, red bell pepper, green bell pepper, red onion, black olives, basil and parsley.
Pour the dressing over the vegetable mixture and toss to coat well.
Add the spaghetti mixture to the vegetable mixture and toss again to combine everything.
Chill for 2-3 hours before serving or enjoy at room temperature.

Easy recipe for cashew cheese
Soak 1 cup of raw cashews in water for 1-2 hours or overnight, then drain and discard the water.
In a food processor or blender, combine the cashews, 2 tablespoons of nutritional yeast, 2 teaspoons of lemon juice, 1/2 teaspoon of salt, and 1/8 teaspoon of garlic powder. Process until smooth, scraping down the sides as needed.
Transfer the cashew cheese to a serving dish and refrigerate for at least 1 hour before serving.
You can use this cashew cheese as a vegan substitute for cheese in many dishes. You can also add your favorite herbs and spices to create different flavors. I hope this helps you.
