Crispy Chinese Chili Chicken with Red Peppers
Ingredients:
– 500g boneless chicken, cut into bite-sized pieces
– 1/2 cup cornstarch
– 1/2 cup all-purpose flour
– 1 tsp baking powder
– 1/2 tsp salt
– 1/2 tsp black pepper
– 1 large egg, beaten
– Oil for frying
– 2 red bell peppers, sliced
– 3-4 green onions, chopped
– 3-4 cloves garlic, minced
– 1-inch piece ginger, minced
– 2-3 tbsp soy sauce
– 2-3 tbsp chili sauce (adjust to taste)
– 1 tbsp sesame oil
– Optional: sesame seeds for garnish
Directions:
In a mixing bowl, combine cornstarch, all-purpose flour, baking powder, salt, and black pepper. Dip the chicken pieces into the beaten egg, then coat them in the flour mixture until well covered. Heat oil in a deep pan or wok over medium-high heat. Fry the chicken in batches until golden brown and crispy, about 5-7 minutes. Remove and drain on paper towels.
In another pan, heat a tablespoon of oil over medium heat. Add minced garlic and ginger, sautéing until fragrant. Add the sliced red bell peppers and cook for 2-3 minutes until slightly tender. Stir in the fried chicken pieces, soy sauce, chili sauce, and sesame oil, tossing everything together until well coated.
Cook for an additional 2-3 minutes, allowing the flavors to meld. Garnish with chopped green onions and sesame seeds, if desired. Serve hot with steamed rice or noodles.
