Ingredients (Serves 4)
For the wontons:
- 24 wonton wrappers
- ½ lb (225 g) ground pork (or ground chicken or turkey)
- 2 green onions, finely chopped
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- Pinch of black pepper
For the soup:
- 6 cups chicken broth
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 2 slices fresh ginger
- 2 green onions, sliced
- Optional: baby bok choy, spinach, mushrooms, or snap peas
Instructions
- Make the filling: Mix the ground meat, green onions, ginger, garlic, soy sauce, sesame oil, and pepper.
- Fill the wontons: Place 1 teaspoon of filling in the center of each wrapper. Wet the edges with water, fold into a triangle, press to seal, then bring the two corners together and pinch.
- Prepare the broth: Bring the chicken broth, soy sauce, sesame oil, and ginger slices to a gentle boil.
- Cook the wontons: Add the wontons to the simmering broth and cook for 4–5 minutes, until they float and the filling is cooked through.
- Add vegetables: Stir in bok choy or other vegetables during the last 2–3 minutes of cooking.
- Serve: Remove the ginger slices, ladle into bowls, and garnish with sliced green onions.
