  • 24 wonton wrappers
  • ½ lb (225 g) ground pork (or ground chicken or turkey)
  • 2 green onions, finely chopped
  • 1 teaspoon grated fresh ginger
  • 1 clove garlic, minced
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • Pinch of black pepper

  • 6 cups chicken broth
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 2 slices fresh ginger
  • 2 green onions, sliced
  • Optional: baby bok choy, spinach, mushrooms, or snap peas

Instructions

  1. Make the filling: Mix the ground meat, green onions, ginger, garlic, soy sauce, sesame oil, and pepper.
  2. Fill the wontons: Place 1 teaspoon of filling in the center of each wrapper. Wet the edges with water, fold into a triangle, press to seal, then bring the two corners together and pinch.
  3. Prepare the broth: Bring the chicken broth, soy sauce, sesame oil, and ginger slices to a gentle boil.
  4. Cook the wontons: Add the wontons to the simmering broth and cook for 4–5 minutes, until they float and the filling is cooked through.
  5. Add vegetables: Stir in bok choy or other vegetables during the last 2–3 minutes of cooking.
  6. Serve: Remove the ginger slices, ladle into bowls, and garnish with sliced green onions.
