cashews spaghetti noodles

Ingredients:
•1 pack of spaghetti noodles
(This recipe also works well with spiralized zucchini or cucumber noodles)
•1 cup sun-dried tomatoes (in oil), drained
•1 cup fresh basil
•½ cup hemp seed
•½ cup raw cashews (soaked****)
•3 cloves garlic, peeled
•Sea salt & pepper to taste
Instructions:
•Cook noodles according to package or spiralize a zucchini or cucumber.
•Place the rest of the ingredients in a food processor (excluding the red pepper flakes) & blend. Scraping down the sides along the way until you reach desired texture. Adding in a lil water or oil if needed to get everything blended down well.
•Mix in with noodles & garnish with red pepper flakes for a lil extra spice. Dig in & in-joy!
***To soak cashews, you can let them soak overnight or for at least 4 hours in a mason jar using filtered water. Or if you’re running short on time, boil some water, then pour over top of cashews in a bowl & let soak for 20 minutes. Avoid using tap water if possible!
