Instructions
- Grate the potatoes, onion, and carrot. Dice the bell pepper and tomatoes.
- In a large bowl, mix the vegetables with eggs, yogurt, flour, and seasonings.
- Stir in grated cheese and chopped parsley.
- Heat a pan with a little oil and spread the mixture evenly.
- Cook on medium heat until golden brown and crispy on both sides.
