🌮 Baked Cream Cheese Taco Roll-Ups — High Protein

Ingredients

  • 8 small flour tortillas
  • 8 oz (225 g) low-fat cream cheese, softened
  • 2 cups (300 g) cooked shredded chicken breast
  • 1 cup (100 g) reduced-fat shredded Mexican cheese
  • ½ cup (120 g) plain Greek yogurt
  • 1 packet taco seasoning
  • ½ cup diced tomatoes
  • ¼ cup diced green onions
  • ¼ cup chopped cilantro
  • ½ tsp garlic powder
  • ½ tsp smoked paprika
  • ¼ tsp black pepper
  • Cooking spray

Optional toppings:

  • Salsa
  • Greek yogurt instead of sour cream
  • Jalapeños
  • Diced avocado
  • Fresh cilantro

Instructions

  1. Preheat oven to 400°F (200°C). Lightly spray a baking dish with cooking spray.
  2. Make the filling:
    Mix softened cream cheese, Greek yogurt, taco seasoning, garlic powder, smoked paprika, and black pepper until smooth.
  3. Add the protein:
    Fold in shredded chicken, reduced-fat cheese, tomatoes, green onions, and cilantro.
  4. Fill tortillas:
    Spread about â…“ cup of filling over each tortilla, leaving a little space around the edges.
  5. Roll tightly:
    Roll each tortilla into a tight cylinder and place seam-side down in the baking dish.
  6. Bake:
    Lightly spray the tops with cooking spray and bake for 18–22 minutes, until the tortillas are crispy and the cheese is melted.
  7. Serve:
    Let them cool for 3–5 minutes, then serve with salsa and a spoonful of Greek yogurt.
