Zucchini Veggie Patties

🥒 Diabetic-Friendly Zucchini Veggie Patties

Makes: 8–10 patties
Serving: 2 patties

Ingredients

  • 2 medium zucchini, grated
  • 1 egg
  • ¼ cup almond flour
  • 2 tbsp grated Parmesan cheese (optional)
  • 2 tbsp finely chopped onion
  • 1 clove garlic, minced
  • 2 tbsp fresh coriander/cilantro or parsley
  • ½ tsp cumin
  • ½ tsp black pepper
  • ¼ tsp salt
  • 1–2 tsp olive oil for cooking

Method

  1. Grate the zucchini and squeeze it very well in a clean kitchen towel to remove excess water.
  2. Mix zucchini with egg, almond flour, Parmesan, onion, garlic, herbs and spices.
  3. Let the mixture sit for 5 minutes. If it’s still too wet, add another tablespoon of almond flour.
  4. Form into small, firm patties.
  5. Heat a nonstick pan with a little olive oil. Cook over medium heat for about 3–4 minutes per side, until golden and cooked through.
  6. Serve warm.

Good diabetic-friendly serving idea: Pair 2 patties with plain unsweetened Greek yogurt mixed with mint/cucumber and a large salad. This gives you protein and fiber without adding much carbohydrate.

Tip: Avoid regular breadcrumbs, white flour, or potato as binders if you’re trying to keep the meal lower-carb.
