Air Fryer Roasted Zucchini
Ingredients:
- 2 medium zucchinis, washed and sliced into rounds or spears
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon dried herbs (such as basil, oregano, or thyme)
- Salt and pepper to taste
- Optional: grated Parmesan cheese for topping
Instructions:
- Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
- In a large bowl, toss the zucchini slices with olive oil, garlic powder, dried herbs, salt, and pepper until evenly coated.
- Place the seasoned zucchini slices in a single layer in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer.
- Cook the zucchini in the air fryer for 8-10 minutes, flipping halfway through, until they are golden brown and crispy on the outside, and tender on the inside.
- Once the zucchini is cooked, transfer them to a serving plate and sprinkle with grated Parmesan cheese if desired.
