Air Fryer Roasted Zucchini


  • 2 medium zucchinis, washed and sliced into rounds or spears
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon dried herbs (such as basil, oregano, or thyme)
  • Salt and pepper to taste
  • Optional: grated Parmesan cheese for topping


  1. Preheat your air fryer to 400°F (200°C) for about 3-5 minutes.
  2. In a large bowl, toss the zucchini slices with olive oil, garlic powder, dried herbs, salt, and pepper until evenly coated.
  3. Place the seasoned zucchini slices in a single layer in the air fryer basket. You may need to cook them in batches depending on the size of your air fryer.
  4. Cook the zucchini in the air fryer for 8-10 minutes, flipping halfway through, until they are golden brown and crispy on the outside, and tender on the inside.
  5. Once the zucchini is cooked, transfer them to a serving plate and sprinkle with grated Parmesan cheese if desired.
