Air fryer herb-roasted baby potatoes
Ingredients:
- 1 pound baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions:
- Preheat the Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.
- Prepare the Potatoes: In a large bowl, toss the halved baby potatoes with olive oil, rosemary, thyme, oregano, minced garlic, salt, and pepper. Make sure the potatoes are evenly coated with the herbs and oil.
- Air Fry: Place the seasoned potatoes in the air fryer basket in a single layer. Cook at 400°F (200°C) for 15-20 minutes, shaking the basket halfway through cooking to ensure even roasting. The potatoes should be golden and crispy on the outside and tender on the inside.
- Serve: Remove the potatoes from the air fryer and garnish with fresh chopped parsley if desired. Serve hot as a side dish.
