5-Minute Diabetic-Friendly Mug Cake 🍫

A simple no-added-sugar, lower-carb mug cake that can fit into a diabetes-friendly eating plan. Keep in mind that “diabetic-friendly” doesn’t mean carbohydrate-free, so portion size and your overall meal plan still matter.

Ingredients

  • 2 tbsp almond flour
  • 1 tbsp unsweetened cocoa powder
  • 1 tbsp plain Greek yogurt
  • 1 tbsp unsweetened almond milk
  • 1 egg
  • ½ tsp baking powder
  • ÂĽ tsp vanilla extract
  • 1–2 tsp monk fruit or stevia sweetener, to taste
  • Pinch of salt
  • Optional: 1 tsp sugar-free dark chocolate chips

Instructions

  1. Add everything to a microwave-safe mug.
  2. Mix thoroughly until smooth.
  3. Microwave for 60–90 seconds. Stop when the center is just set; avoid overcooking.
  4. Let it cool for 1–2 minutes before eating.

Approximate nutrition: Depending on the yogurt, milk, sweetener, and toppings used, one mug cake is roughly 200–250 calories and 6–10 g net carbs.

Tip: For a more filling dessert, serve it with 1–2 tablespoons of unsweetened Greek yogurt rather than sugary frosting.
