Cucumber Tomato Onion Salad

Ingredients

For the Salad

  • 2 large cucumbers, sliced
  • 3 medium tomatoes, chopped
  • ½ medium red onion, thinly sliced
  • ¼ cup fresh parsley, chopped

For the Dressing

  • 3 tablespoons olive oil
  • 2 tablespoons fresh lemon juice
  • 1 tablespoon apple cider vinegar
  • ½ teaspoon dried oregano
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 small garlic clove, minced

Instructions

  1. Add the sliced cucumbers, chopped tomatoes, red onion, and parsley to a large bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, apple cider vinegar, oregano, salt, black pepper, and minced garlic.
  3. Pour the dressing over the vegetables.
  4. Gently toss everything together until the vegetables are evenly coated.
  5. Refrigerate for 15–30 minutes before serving to allow the flavors to blend.
  6. Give the salad one more gentle toss and serve chilled.

Tips

  • For extra crunch, use firm cucumbers and tomatoes.
  • If you prefer a milder onion flavor, soak the sliced onion in cold water for 5–10 minutes, then drain well.
  • Add feta cheese or fresh herbs such as dill for extra flavor.
